How To Make Finger Sandwiches

Finger sandwiches are great for a snack for young kids, as an appetizer before lunch, or as hors d’oeuvres at a gathering. Use light, fresh ingredients to keep this snack delicate and tasty. These small bites were traditionally served with tea in England as an afternoon snack. Use ingredients like sprouts, arugula, tomatoes and your favorite dressing on your finger sandwiches. Slice the tomatoes – and any other ingredients you choose to use – very thinly to preserve the delicate nature of these sandwiches. Once you’ve made your sandwich and after removing the crust, cut the sandwich into four even pieces. Secure the finger sandwiches with toothpicks to ensure that they look as good on the serving place as they taste. Tomato and Arugula Finger Sandwich Recipe

Ingredients:
2 slices white or wheat bread
1/2 Tbsp. chipotle aioli or mayonnaise
1/2 oz arugula
1/2 oz alfalfa sprouts
1 thinly sliced ripe tomatoes

Method:
1. Spread about 1/2 tablespoon of aioli and/or mayo on each slice of bread
2. Add a layer of alfalfa sprouts to cover aioli on each slice of bread
3. Add a layer of baby arugula on one slice, spread evenly
4. Layer tomatoes on top of baby arugula
5. Remove the crusts and slice the sandwiches two times, diagonally, to make four tea sandwiches from each large sandwich
