Marchand De Vine is a demi-glas with red wine and chopped shallots reduced by three-fourths. Demi-glas is typically used as a dressing for meat. Marchand De Vine sauce goes very well with steaks and roasts. The following small sauce recipe uses brown sauce or demi-glas. Add the following ingredients to 1/2 quart of Brown sauce or Demi-Glas and follow the steps to make the finished sauce.

Marchand De Vine Sauce Recipe

Ingredients:
16 oz. Brown sauce or Demi-Glas
1 oz. Shallots, minced
3 oz. Red wine

Procedure:
1. Reduce wine and shallots until au sec (dry).
2. Add sauce and let simmer for 15 minutes.
3. Season with salt and pepper if needed.
