The crisp, green pods pack a lot of nutrients into every bite. While snap peas are delicious fresh, they can also be cooked and make a wonderful addition to a stir fry or as a standalone side. These pods come in many different varieties and have a distinct sweet flavor. They are rich in vitamin K, vitamin B6, vitamin C and iron. One of the most popular ways to prepare snap peas is to stir fry them for an Asian inspired side dish. You can find fresh or frozen snap peas, but fresh ones will have that unique crisp texture that gives the pea pods their name. Prepare the peas by removing the ends or any string from each pod. Once the peas are clean, sauté the peas in a wok with oil, garlic, pepper and salt. Snap Peas Recipe:

Ingredients:
1# of Snap peas
2 Tbsp shallots, minced
1/2cup of oil
2 each thyme sprigs

For Garnish (optional)
Brunoise red peppers
Sliced Scallions
Chili Oil

Directions:
1. Place Snap peas washed in a roasting pan.
2. Drizzle with oil and shallots
3. Place some rosemary sprigs and salt on top.
4. Roast at 425F till roasted, about 10 – 15 minutes.
5. Place on platter and garnish with brunoise of red pepper, shallots and some chili oil (Optional)
