Coleslaw is a classic side dish that conjures up images of picnics and sunny days. Thinly slice cabbage, then lightly salt the shredded result and allow to rest for about 30 minutes. This will soften the cabbage slightly giving it a texture better for the slaw. Rinse the cabbage and add the accompanying ingredients like raisins, shredded carrot and red cabbage. Toss the solid ingredients to combine and add in rice wine vinegar, onion salt, pepper and mayonnaise. Coleslaw Recipe:

Yield: 6 servings

Ingredients:
3 cups shredded cabbage
1 cup shredded carrot
1 cup shredded red cabbage
1 cup mayonnaise
1/4 cup rice wine vinegar or lemon juice
1 teaspoon onion salt
Black pepper
Rice wine vinegar or lemon juice

Direction:
1. Cut the cabbage, salt it to soften – wash and drain.
2. In a large bowl, combine cabbage and carrots. In a smaller bowl, make dressing by combining mayonnaise, vinegar, onion salt and pepper. Toss dressing into cabbage mixture and let chill. Serve in a family style bowl. [private/]
