How To Make The Elegant Strawberries A La Ritz

This elegant and simple desert is great for a warm summer night or after a large decadent dinner. It is easy to make when you are pressed for time, and requires no cooking, so you don’t have to stand over a hot stove or oven in the summer heat. Strawberries a la Ritz was named for Cesar Ritz, a famed Swiss hotelier who enjoyed the finer things in life. For this dessert, you can simply make a puree from fresh strawberries and raspberries, but be sure to strain the seeds out to get a smooth consistency. Once the puree is done, whip cream and sugar to a stiff texture. Add the berry mixture to the cream; it will need to hold its shape, so don’t quit whipping too soon. The folded-together puree and whipped cream mixture is referred to as a “pink cloud” puree, which is poured over sugared strawberries. In this video, Chef Susie will show you how to make the elegant strawberries a la Ritz. For more great cooking demonstration videos, subscribe to the LearnToCookOnline YouTube channel.
