This elegant and simple desert is great for a warm summer night or after a large decadent dinner. It is easy to make when you are pressed for time, and requires no cooking, so you don’t have to stand over a hot stove or oven in the summer heat. Strawberries a la Ritz was named for Cesar Ritz, a famed Swiss hotelier who enjoyed the finer things in life. For this dessert, you can simply make a puree from fresh strawberries and raspberries, but be sure to strain the seeds out to get a smooth consistency. Once the puree is done, whip cream and sugar to a stiff texture. Add the berry mixture to the cream; it will need to hold its shape, so don’t quit whipping too soon. Strawberries a la Ritz Recipe

Ingredients:
3 1/2 cups fresh strawberries
2 teaspoons sugar
Halve strawberries – setting a few aside for garnish, place the remaining strawberries in a shallow bowl in two layers- sprinkling each layer with a teaspoon of sugar. Chill for 30 minutes

For the Berry Cream sauce:
Ingredients:
1 cup fresh strawberries
1 cup fresh or frozen raspberries
5-6 tablespoons powdered sugar
1/2 cup heavy cream
1/2 teaspoon vanilla extract

Method:
1. Puree strawberries in a blender until smooth, transfer to a bowl. If using frozen raspberries, thaw and drain, then puree in a blender and strain to remove seeds
2. Mix strawberry and raspberry puree together and add 2 tablespoons of powdered sugar. Chill for 30 minutes
3. Finish the sauce a short time before serving. Whip cream until nearly stiff and add 1 tablespoon of powdered sugar and vanilla, continue whipping cream until stiff
4. Gradually fold puree into the whip cream, fold in another tablespoon of powdered sugar if desired
5. Spoon sauce over halved strawberries in a bowl and garnish with the remaining halved strawberries
6. Serve immediately, can be kept in the refrigerator for 30 minutes
