How To Make Potato Salad

Perhaps nothing corresponds so perfectly with the image of summer picnics and cookouts than potato salad. No matter what you have for the main course, potato salad always seems to make its way onto the table – or blanket. This recipe is easy to make, but it can also be easy to forget. Make your potato salad stand out from the pack with a dash of herbs and seasoning to give it an extra kick. It is also important to add some texture to your salad with a little crunch from ingredients like fresh celery and red onion. But don’t go overboard, this is meant to be a simple side dish that compliments your summer meal. Potato Salad Recipe

Ingredients:
1 lb. small yukon gold
1 lb. small red potatoes
1 medium bermuda onion, small diced
1 tbsp. sea salt for cooking the potatoes
1-1/2 cup olive oil mayonnaise
1 whole red pepper small diced
2 stalks of celery sliced
1 oz. red wine vinegar
1 tsp sea salt for seasoning
1/2 tsp black pepper
1/4 tsp garlic salt if desired.

Method:
1. Scrub potatoes well and place in cold water with salt cover and bring to simmer and cook until just tender for about 25 minutes.
2. Potatoes are best not boiled but simmered.
3. Cool slightly and mix in the cut vegetables, add vinegar, mayo and seasonings.
4. Adjust consistency as desired and seasoning.
