This fun variation is a new twist on an old favorite. Sweet potatoes offer more nutrients like vitamin A, beta-carotene and potassium. Sweet potato fries can be prepared just like ordinary french fries, either fried or baked. Lightly coat the cut fries in olive oil and dust them with cornstarch to achieve a delightfully crisp crust. Spread the fries evenly across the baking sheet so they cook evenly. If you prefer less crispness, omit the cornstarch from your recipe. Try dusting your sweet potato fries with cinnamon and sugar for a sweet and satisfying treat. The flavor combination is perfect; just steer clear of the ketchup with those ones. If you prefer more of a savory snack, try seasoning your fries with cumin or paprika. Sweet Potato French Fries Recipe

Ingredients:
4-5 ea. sweet potatoes
1 qt. of corn oil
Heavy bottom pan
Candy thermometer

Method:
1. Pre-heat oil to 375oF
2. Wash the potatoes, peel (or leave skin on) and cut into French fry-style shape with a chef’s knife
3. Make sure potatoes are perfectly dry
4. Cook potatoes until golden brown at 375oF
5. Serve with sea salt
