How To Make Rice Pudding

Rice pudding is a time-tested dish that has been popular all across the world. To make the perfect rice pudding, cook rice first in milk for about 25 minutes. While the rice is cooking, thoroughly whisk together the eggs and sugar. The rice should cook completely before adding in the rest of the ingredients. When the rice is ready, add a cup of the rice and milk mixture to the eggs to temper the eggs – this helps avoid shocking the eggs with the hot rice. Slowly add in the eggs to the rest of the rice, whisking them together to create the pudding. You can add flavors like cinnamon, vanilla or even raisins to give some depth to the dessert. Some chefs like to add different flavors like currant or apricot to the dish, so play with flavors that you enjoy. Rice pudding is delicious served warm, but if you want to grab some leftovers, it is just as delightful after it has been refrigerated. Rice Pudding Recipe

Ingredients:
1/3 uncooked white rice
2 ½ cups whole milk
1 tablespoon butter(unsalted)
1 egg
1/8 teaspoon salt
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/3 cup raisins

Method:
1. In a medium sauce pan bring the rice, milk and salt to a boil. Simmer gently until the rice is tender about 20-25 minutes. Stirring frequently
2. In a bowl wisk together the eggs and sugar. Add about a 1/2 cup of the rice mixture to the egg mixture, pour the egg mixture in the sauce pan and cook until thickened stiring constantly
3. Remove from the heat and stir in the vanilla, butter, cinnamon and raisins
4. Serve warm or cold
