Making the dough
To make the perfect dough for your rolls, you’ll need milk, sugar, butter, flour, yeast, eggs and salt.

1. Use an electric mixer to beat a portion of the flour and remaining ingredients together. Note: You can replace part of the flour with whole wheat flour or gluten free flour if you choose, but be sure to add slowly and in small portions because these flours have a different flavor and texture. If you add too much flour during mixing and kneading, the bread can become dry and heavy.

2. Next, you knead the dough for about three to five minutes. In order to do so, fold the dough over and push down with the heel of your hand. Then turn, fold dough over and push down again. Repeat this process over and over until the dough is smooth and elastic. The point of kneading is to strengthen the gluten, which is a protein that naturally occurs in wheat, rye, barley and crossbreeds of these grains.

3. Place the dough into a clean, greased bowl, which makes getting the dough out much easier. Cover the dough and let it rise in a warm place until it has doubled in size. Push your fist into the center of the dough, cover, and let rest on a floured surface before shaping.

4. Roll the dough from the center to the edges into a rectangle measuring about 18×12 inches. Spread softened butter of the top and spread, leaving a ½-inch border around the edges.

Sprinkling the filling

1. Evenly sprinkle brown sugar, white sugar and cinnamon without skimping on the edges. If you want to put a spin on your filling, try adding miniature chocolate pieces, toasted nuts, assorted fruit bits or raisins.

2. Starting from a long edge, firmly roll up your dough, but not too tightly. Pinch from the edge of the dough to the rolled dough to create a seal.

Slicing and baking

1. Score the roll into 12 even slices, cut and arranged onto a greased pan.

2. Before baking, let the rolls stand for 30 minutes at room temperature. Bake about 30 minutes or until browned in a 350-degree oven.

Frosting

After they’ve cooled, use a wire whisk or spoon to drizzle on icing. You could also use a knife to spread the rolls with thicker icing.
