Chocolate Zucchini Bread Recipe
Yield: One 9 x 5 x 3″ loaf pan

1 ½ cup (about ½ lb.) zucchini, grated
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp. baking soda
¼ tsp. baking powder
¼ tsp. salt
½ tsp. ground cinnamon
¼ tsp. ground allspice
½ cup vegetable oil
½ cup sugar
½ cup light brown sugar
2 whole eggs
1 tsp. vanilla extract
¾ cup bittersweet chocolate chips

1. Preheat oven to 325°F. Grease and flour a loaf pan
2. In a large bowl, mix all dry ingredients
3. In a separate large bowl, beat the oil, sugars, eggs, and vanilla extract until well blended
4. Fold in the grated zucchini
5. Mix in the dry ingredients until just combined
6. Fold in chocolate chips
7. Transfer to prepared loaf pan and bake 55-65 minutes, or until a wooden skewer comes out clean
8. Let cool completely on rack before slicing
