How To Make Vodka Sauce
When preparing vodka sauce, determine the quality of the vodka used from 1) your budget and 2) the amount of sauce being made. Using premium vodka will with no doubt enhance the end flavor of the sauce, but even experts will have a hard time distinguishing between Cîroc or Amsterdam vodka. Bottom line, don’t be afraid to choose an inexpensive vodka for this recipe. Begin by mixing your onions and vodka in a shallow pan in order to burn away the alcohol, but be careful because it will ignite quickly. Once your flame dies down and the alcohol is gone start mixing in the tomato sauce and crushed tomatoes. Let all of the ingredients simmer over a small flame for about 30 minutes, add the cream, then continue to simmer for another 30 minutes.
