How To Make Fried Cheese – Saganaki

This fried cheese dish is prepared in the small Greek frying pan called a saganaki. The dish itself is often referred to as saganaki and is a favorite appetizer of many. While the dish is traditionally made in its namesake frying pan, if you don’t have a saganaki pan you can still make this tasty treat at home. Any frying pan will work fine.  Be sure to season both sides of your kasseri or halloumi cheese, or marinate in cognac. Place the cheese in a pan of melted butter to fry evenly on each side once the cheese has reached a golden brown color. You can flambé the cheese with the rest of the cognac, but it is not necessary if you don’t feel comfortable working with open flames. Fried Cheese Recipe (Greek Saganaki)
Yield: 5 servings

Ingredients:
5 (1/2-inch) slices Kasseri cheese
Salt
Freshly ground black pepper
Nutmeg
2 cups brandy
1 cup flour
4 tablespoons butter
2 lemons, juiced
pita bread, brushed with olive oil, grilled and quartered or Pita Chips
1 cup Kalamata olives

Directions:
1. Season both sides of the cheese with salt and pepper. Place the cheese in a shallow dish and cover with brandy. Cover with plastic wrap and refrigerate for 2 hours.
2. Season the flour with nutmeg, salt and pepper.
3. Remove the cheese from the pan, reserving 1/4 cup of the brandy and dredge in the seasoned flour, coating completely.
4. In a large sauté pan over medium heat, melt the butter. Pan-fry the cheese for 2 minutes on each side. Add the reserved brandy and carefully flame the liquor, shaking the pan back and forth several times. Add the lemon juice. Remove from the pan and serve with the pita bread and olives.
