Fried Zucchini Recipe

Ingredients
1 Zucchini per person
1 pt (approx.) corn oil for pan frying
Breading Procedure see below:
2 cups AP Flour, 1 egg per zucchini, 3 cups panko bread crumbs (approx.)
Sea Salt
Water for egg wash
Sriracha sauce

Procedure
1. Wash and scrub well the green squash, cut off ends and cut into French fry shapes.
2. Ensure oil reaches 375oF before adding small amounts of breaded squash
3. Lower breaded pieces into oil and cook one side for 2- minutes, turn over and cook on other side.
4. Thickness of cut will decide how long the cooking process will be.
5. Golden brown on all sides is desired. Serve hot with Sriracha sauce.

Breading Method:
Salt the flour and place into small pan, add cut squash, cover well, lower into egg and wash all sides with egg.
Ratio of water to egg is 1 Tbsp per whole egg. Then remove and thoroughly bread with panko. Shake gently excess breading.
Cook in hot oil.
