How To Make Sweet Potato Pie

This southern classic is similar to pumpkin pie. The custard is easy to make and sweet potatoes are a great source of vitamin A and beta carotene so you won’t feel guilty about enjoying your dessert. To make the filling, combine cooked sweet potatoes and butter in a standing mixer to create a creamy puree. Add in sugar, cinnamon, vanilla, ginger, and eggs and mix until all the ingredients are evenly incorporated. You can add the filling to your homemade pie crust and bake until the pie is set. If the pie is still runny or jiggles, you will need to cook it longer. Sweet Potato Pie Recipe

2 cups cooked or canned sweet potatoes
1 ¼ cup sugar
½ stick melted butter
2 eggs
1teaspoon vanilla
¼ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon ginger
1 cup milk

1. Mix the sweet potatoes with electric mixer until smooth
2. Add the sugar, salt, cinnamon and ginger
3. Add the butter, eggs and milk
4. Pour into an unbaked pie shell and bake at 350 degrees for 35-45 minutes or until a knife inserted in the center comes out clean. Cool and serve with whip cream
