How To Make Lemon Baked Cod
This simple recipe is easy to make with a very few ingredients. If you are looking for a light meal, with a lot of flavor this healthy dish is your answer. Season the cod fillets with salt and pepper on each side then combine panko breadcrumbs, parsley, lemon zest and a bit of oil in a shallow container. Lay each cut of cod in the container and cover with the bread-crumb mixture. The natural moisture of the fish should be enough to allow the breadcrumbs to adhere without an egg wash. Ensure that the fillets bake evenly by flipping them half way through the cook time. This will allow the bread crumbs to achieve that crisp golden brown texture on each side. Serve with some herbed quinoa and sautéed vegetables and you have a healthy, satisfying dinner. Baked Lemon Cod Recipe:
Ingredients:
2 cups Panko Bread crumbs
1/4 cup extra-virgin olive oil
1/4 cup chopped fresh flat-leaf parsley
2 teaspoons finely grated lemon zest (from 2 lemons)
3/4 teaspoon coarse salt
4 cod fillets (4 ounces each), skinned
Directions:
1. Preheat oven to 350 degrees. Combine bread crumbs, oil, parsley, zest, and salt.
2. Set a wire rack on a rimmed baking sheet. Press fish in crumb mixture, turning to coat. Transfer to wire rack. Bake until golden brown and cooked through, 8 to 10 minutes.
