Although the edible serving dish makes the dish look complicated, it is actually very simple to make. Just prepare the stuffing and then core a pepper, remove the membrane, fill it with the stuffing and bake in the oven. So simple and it can be done in under an hour. This dish can take on many different flavors. Stuffed Peppers Recipe – Gemista

Ingredients:
4 whole red peppers, top cut open, deseeded
½ cup diced Carrot
½ cup diced Celery
1 Tbsp minced Dill
½ cup Diced tomato
2 cups cooked Rice

Directions:
1. Sweat the celery, onion and carrots in olive oil with garlic. Add cooked rice and diced tomatoes and dill. Taste for proper seasoning before filling the peppers. Season the cut open, deseeded cleaned peppers with salt and pepper and olive oil than add the filling.
2. Place in oven and bake at 350F for 30 minutes covered with foil to avoid burning the tops. Test with toothpick if peppers are cooked through.
3. Plate with roasted tomatoes and potatoes as garnish.
