Roasted Poblano Guacamole Recipe
Serves 6

Ingredients:
3 large ripe avocados, peeled, pitted, and chopped
1/4 cup yellow onion, small dice
3 poblano chiles
1 large jalapeno chile, seeded and minced
1 tsp. lime zest
1/4 cup fresh lime juice
3 tablespoons olive oil
1 teaspoon ground cumin
1 large tomato, seeded and chopped
1/2 cup fresh cilantro, chopped

Method:
1. Char poblano chiles directly over gas flame or under broiler until blackened and blistered on all sides. Transfer peppers to a bowl and cover with plastic wrap. Let steam for at least 10 minutes.
2. Peel off the blackened skin from each pepper. Remove stems, ribs, seeds then chop into a small dice
3. In a large bowl, mix remaining ingredients with the roasted poblano peppers. Season to taste with salt and pepper
