How To Make Sizzling Steak Fajitas

Fajitas are a great, versatile Tex-Mex dish. The dish can be made with chicken, pork, beef, with seafood like shrimp or even just vegetables. This sizzling dish was actually created in the U.S., although it often gets lumped in with Mexican dishes. If you’re looking to feed the whole family, fajitas can be a fun and quick dish to mix up the menu. Each member of your family can pick and choose his or her toppings, making less work for you! Marinate your protein overnight to get a deep flavor before cooking the meat. Cut the meat or fish in long, thin strips so it is are easier to eat. Cut the bell peppers and onions in thin strips as well and sauté with seasoning. Combine the meat and peppers and if you want to create a fajita bar, place them in a bowl for each of your family members to serve themselves. Serve fajitas with plenty of tortillas, cheese, pico de gallo, guacamole, lettuce and sour cream. Steak Fajitas Recipe
Yield: 4 servings

Ingredients:
1 pound skirt steak, flank steak, carne asada
1 tablespoon vegetable oil
2 ounces yellow onion, batonnet cut
1/2 pepper green bell pepper, batonnet cut
1/2 pepper red bell pepper, batonnet cut
1/2 pepper yellow bell pepper, batonnet cut
1/2 cup tomatoes, small dice
4 ounces colby-monterey jack cheese
1/2 cup iceberg lettuce, shredded
1/2 cup sour cream
1/2 cup guacamole
Taco seasoning to taste
1/2 teaspoon kosher salt
1/4 teaspoon Black pepper

Marinade:
1 each lime juice
2 tablespoons olive oil
1/2 teaspoon garlic, minced
1/2 each jalapeno pepper, seeded, fillet and brunoise
1/4 cup cilantro, finely chopped

Direction:
1. Thoroughly mix all the marinade ingredients and coat the skirt steak with marinade and refrigerate for 6-8 hours
2. Drain all marinade off skirt steak and season with salt and pepper
3. Heat a large cast iron pan or griddle over high heat. When pan is hot add the oil and allow to heat. Fry the skirt steak for 3-4 minutes on each side, wrap in foil to allow meat to rest. Reserve in warm oven
4. Using the same pan and adding more oil if needed and sauté all the vegetables until al dente
5. Slice the meat against the grain to ¼ inch thick (the thinner the cut there is less risk of meat being tough)
6. Place meat on a warm flour tortillas, top with vegetables, garnish with cheese, lettuce, tomato, guacamole and sour cream
7. Serve on warm plate
