Roasted Vegetable Monster Mash Recipe:
Serves 6

Ingredients:
½ lb. carrots
½ lb. radishes
½ lb. turnips
½ lb. beets
½ lb. fingerling potatoes
½ lb. Brussels sprouts
¼ cup vegetable oil
¼ cup sherry vinegar
Salt and pepper, to taste

Method:
1. Preheat oven to 350°F.
2. Wash, peel and dice all vegetables, keeping each variety separate.
3. Toss each variety in oil and season with salt and pepper. Roast separately 20-30 minutes or until fork tender.
4.Combine all roasted vegetables except the beets in a large bowl. Toss with sherry vinegar and re-season with salt and pepper, as needed.
5. Gently combine beets with other vegetables. Over mixing will cause the beets to bleed their red juices all over the other vegetables.
6. Serve warm and enjoy.
