A simple macaroni salad makes a great addition to any barbecue or picnic. Because it is easy to make in large batches, it is great for sharing too. While the pasta is still warm, add the dressing so the flavors are absorbed into the pasta. As you let the pasta chill, the flavors will blend further creating an even flavor in every bite. Although you can add any variety of vegetables and seasonings into macaroni salad, be sure to dice the ingredients evenly so it is easy to toss together. An easy and popular dressing is a simple mixture of mayonnaise, white wine vinegar and mustard. Macaroni Salad Recipe

Ingredients:
1 lb. cooked macaroni of choice (ie: fusilli, cavatapppi, penne rigate, elbows, bowties) drained, rinsed, and kept warm
2 oz. chopped onion
2 oz. chopped celery
1 oz. chopped Italian parsley
1 red pepper diced
1 tsp. salt or more
1/2 tsp. black pepper
1 tbsp. sugar or more if desired
1-2 oz. high quality white wine vinegar or more if desired
1-2 oz. grainy mustard
1 cup of light mayonnaise or more if desired

Method:
1. Cook pasta al dente in salted water, drain keep warm
2. Add sugar, vegetables and vinegar, mustard and parsley mix well
3. Add mayonnaise
4. Add salt and pepper for taste
5. Garnish with some diced red peppers, celery and onions
