Have a healthy fiesta with a tasty taco salad. This salad has all the flavor of your favorite Tex-Mex dishes without the heavy tortillas and taco shells. If you use a ground chuck that is made for chili as the meat for your salad, the higher fat percentage will lend great flavor, but don’t add any fat or oil to cook with. After you have browned the meat with onions and taco seasoning, drain any excess fat and allow the meat to cool. Toss shredded romaine lettuce, diced tomatoes, sliced black olives and diced green peppers together with seasoning and dressing if you desire. With so much flavor, dressing may not be necessary. Taco salad Recipe

Ingredients:
1 lb.‘ground meat for chili’, is sometimes avail, it’s a larger grain than finely ground. If not use 75/25 regular ground chuck
1/2 envelope onion soup mix, about 1/4 cup
1/4 tsp. dried thyme
1/8 tsp. dried Mexican oregano (if desired for the finished salad as garnish)
3/4 cup water
1/2 tsp. hot pepper sauce
1/2 tsp. ground black pepper
1/4 tsp. sea salt
1 medium head lettuce, shredded, about 4 cups
1 cup shredded sharp jack or cheddar cheese
1 large tomato, chopped
1/2 cup sliced black olives
1/4 cup chopped green bell pepper
2 cups corn chips
1 oz. taco sauce (optional to dress the salad)

Preparation:
1. Brown beef in a heavy skillet, no oil; be sure to drain off excess fat
2. Sprinkle onion soup mix over beef and stir in water. Add thyme, simmer, uncovered, until liquid cooks away, about 8 to 12 minutes. Stir in hot pepper sauce
3. In a large bowl, combine shredded, washed and well drained iceberg lettuce, tomato, olives, and green bell pepper; reserving some for garnish toss
4. Add a few additional dashes of hot sauce and mix well again. Add black pepper and salt
5. For each serving, place lettuce mixture on salad plate or bowl, top with cheddar cheese and some the meat mixture and garnish taco salad with reserved diced tomatoes, black olives, green pepper. Place corn chips or strips around side and on top of the taco salad (for homemade corn taco chips, cut corn tortillas into strips and fry briefly in hot oil and use as the garnish for taco salad)
