How To Make Candied Yams
Yams are a great addition to your diet. Like sweet potatoes, yams are rich in beta carotene, potassium and vitamin C. While they are very similar, yams and sweet potatoes are from two different plant families. Peel roasted yams and cut them into chunks. The sizes can vary. As the yams cook, they soften and are easy to cut into small pieces when eating. Simmer orange juice, brown and white sugar and butter in a sauce pan and then add the yams. Allow the yams to marinate in the sauce until they have absorbed some of the delicious candied flavor. In this video, Chef Mark provides an online cooking lesson for sweet and seasonal candied yams. Candied Yams Recipe:
Ingredients:
6 Yams, peeled and cut in even pieces
1 cup Orange juice
½ cup cane sugar
½ cup brown sugar
1 each cinnamon stick
Directions:
1. Oil and bake in oven until fork tender. 450 degrees for about 35 mintues.
2. Peel them and cut them in even pieces.
3. Reduce Orange Juice with sugars and add the yams.
4. Make sure the yams are cooked well in the glaze, serve on platter.
5. Use fresh orange zest at garnish.
