How To Cook A Healthy Herb Quinoa

Although it may be difficult to say (it’s pronounced keen-wah), it is easy to cook. Quinoa is an amazingly healthy grain that is a complete protein source and packed with dietary fiber. This supergrain can be substituted for rice in many recipes. Although the grain has a nutty light flavor itself, adding some herbs and spices to it while cooking can give the grain some great flavor. There are white, red and black varieties of quinoa. While they are all wonderful and can be used interchangeably, they are better suited for different dishes. After the quinoa is cooked, transfer it to a mixing bowl and combine it with chiffonaded fresh herbs. Use fragrant herbs like basil, parsley and thyme. Herb Quinoa Recipe:

Ingredients:
Chicken Stock 2.75 Cups
Fresh Lemon Juice ¼ Cup
Quinoa 1 ½ Cup
Olive oil ¼ Cup
Lemon juice ¼ Cup
Basil, chiffonade ¾ Cup
Parsley, chopped ¼ Cup
Thyme 1 Tbsp
Lemon Zest 2 Tsp

Directions:
1. In a medium saucepan, add the chicken stock, lemon juice and quinoa. Bring to a boil over medium-high heat. Reduce the heat to a simmer, cover the pan and cook until all the liquid is absorbed, about 12 to 15 minutes.

2. In a separate bowl, mix together the olive oil, lemon juice, basil, parsley, thyme, and lemon zest. Season with salt and pepper to taste.

3. Pour the dressing over the quinoa and toss until all the ingredients are coated. Transfer the quinoa to a serving platter.
