How To Make Quinoa Apple Cranberry Salad
Quinoa is a wonderful grain that has complete protein and plenty of minerals and fiber. This super grain can be served warm or cold and is a delicious addition to any dish or can be served alone as a side. To make a tasty cranberry and apple quinoa salad, prepare the quinoa similar to how you would prepare rice. When the quinoa is cooked, cool the grain while preparing the rest of the salad. Make a simple red wine vinaigrette with Dijon mustard and extra virgin olive oil. Combine the quinoa with chopped apples, dried cranberries – or freshly cooked cranberries if you like their tangy taste – and sliced almonds. Slowly add the vinaigrette while stirring the mixture together. You can serve the salad alone or over a bed of lettuce or spinach to add even more nutrients to this tasty dish. Quinoa Apple Cranberry Salad Recipe:
Ingredients:
1 cup red quinoa
1 1/2 cups water
1/2 cup dried cranberries
½ cup honey crisp apples, small diced
1/2 cup sliced almonds
To taste salt
To taste black pepper
To taste red wine vinaigrette
Directions:
1. Rinse the quinoa and put it in a small sauce pan. Add the water to the quinoa and bring to a gentle boil, cover, reduce the heat to low, and simmer until the quinoa is fully cooked and the water has been absorbed.
2. Fluff the quinoa with a fork and transfer it to a large plate or platter, spreading it out to help it cool quickly. Refrigerate until cold.
3. When the quinoa is cold, toss it in a large bowl with the rest of the ingredients and dress it with the vinaigrette. Season with salt and pepper if needed.
