How To Make Potato Pancakes

Potato pancakes, latkes, kartoffelpuffer – whatever you call them, these pan-fried patties are delicious. Potato pancakes are a traditional dish of many Eastern European countries. Nations from Germany to Ukraine enjoy many varieties of the dish. Potato pancakes are a breeze to make, requiring only a few ingredients. Simply grate the potatoes and onions, and then combine with egg to form the patties and fry. These golden patties are crispy on the outside and warm and delightfully starchy on the inside. You can serve potato pancakes with savory toppings like sour cream or go for a sweet variation and top them with applesauce. Potato pancakes are a great way to use up leftover mashed potatoes from holiday gatherings as well. Potato Pancakes Recipe

Ingredients:
4 medium size potatoes (about 1 -1/2lbs)
2 medium onions, grated or minced
1 egg
2-3 tbsp. all-purpose flour
1 tsp. sea salt
1/4 tsp. black pepper
corn oil

Method:
1. Scrub potatoes well, peel and keep in water
2. Grate onions using food processor attachment if available
3. Grate potatoes mix with the onions and add salt and add the egg add flour. Combine all well. Add more flour for a firmer pancake. The mixture should be still liquid enough to easily spoon it
4. Heat large frying pan with 3 tbsp. of oil over moderate heat. When pan is warmed, spoon mixture with a table spoon and fry on one side until golden brown turn down heat if too dark in color
5. Turnover pancake and fry for the same amount of time
6. Serve potato pancakes warm with either mayonnaise, sour cream, or mushroom sauce
