Bacon & Potato Frittata Recipe
Serves 4

Ingredients:
2 Yukon Gold potatoes
8 whole eggs
2 tablespoons water
6 slices bacon, diced
1 small yellow onion, diced
2 tablespoons minced fresh parsley
Salt and freshly ground pepper, to taste

Method:
1. Cook the potatoes in salted boiling water until barely tender, about 15 minutes. Drain, peel, and slice about 1/4 inch thick
2.. In a medium bowl, beat the eggs and water just until blended. Preheat the broiler
3. In a 10-inch sauté pan or cast iron skillet, cook the bacon over medium heat until crisp. Transfer to paper towels to drain
4. Pour off all but 2 tablespoons of the drippings. Sauté the onion and potatoes until soft and glazed. Add crumbled bacon
5. Pour the eggs over the potato mixture. Season with salt and pepper. Reduce the heat to low and cook until the eggs are set. Place under the broiler to heat through
6. Sprinkle with parsley. Slide onto a warm platter, cut into wedges and serve
