Fish doesn’t typically get smothered in cheese, but when it does, it certainly doesn’t disappoint. You can make a tuna melt sandwich from tuna salad or just lightly seasoned tuna. If you made too much tuna salad for lunch the day before, a tuna melt will give it new life so you don’t feel like you’re eating the same thing day after day. Layer tuna salad, cheddar cheese and sliced onions on sourdough bread – or whatever bread you have in the pantry. Once the sandwich is assembled, crisp the bread and melt the cheese in a well-buttered frying pan. Tuna Melt Recipe

Ingredients:
3 cans tuna
4 Tbsp celery, diced
6 Tbsp mayonnaise
2 Tbsp dijon mustard
1/2 Tsp dill, fresh
2 slices white bread
2 slices cheddar cheese
1/2 each onion, chopped
To taste salt
To taste black pepper

Directions:
1. Flake the tuna into chunks
2. Mix the tuna with all the other ingredients in a bowl. Test for salt and add it to taste
3. Toast the slices of bread and place the tuna on one of the slices and cover the tuna with the cheese
4. Bake in a preheated oven for about 7 minutes or until the cheese is melted and the tuna is warmed
5. Cut the sandwich in half and serve immediately
