Because the nation is surrounded by oceans on the east and west, it has an abundance of fresh seafood. The fresh flavors are what truly make this stew, so be sure to get quality ingredients. A delicious stew will include large pieces of corn on the cob, carrot, and onion with lobster tail, shrimp, clam, squid and crab. Add the seafood into the broth in the order of required cooking time, putting in the longest cook time first. Feel free to omit or add any type of seafood you please. Saffron broth will give the stew a beautiful color and a distinct Spanish flavor. As the flavors marry while simmering, add salt or pepper to taste. Nicaraguan Seafood Stew Recipe:

Ingredients:
1 ear of Corn cut in 3 slices
1 each Chayote, sliced
½ Carrot, sliced oblique
½ each Onions julienne
½ cup diced tomatoes
¼ tsp Saffron
4oz of squid
4oz of Crab legs
2 large Sea Scallops, cut in half
4 large Shrimp, peeled and deveined
Other seafood may be added according to personal choice

Instruction:
Boil in water, corn, onion, chayote, carrots and saffron. Add shrimp, add scallops, diced tomatoes, and finally the cleaned and cross marked squid with tentacles and crab legs as they are already cooked. Seasoning with salt to bring out the flavors and serve in large bowl family style.
